Pizza Bites Low Carb Keto Recipe Step by Step Instructional Video

Hey keto family! David showed a 60 second video of these to die for pizza bites and his friends kept asking them to show them How To make them, not just tell them. So here he is cooking them up with visual instructions. These are simple and easy to make and fit right in line with your low carb keto diet. This recipe makes 12 pizza bites @ 2.7 net carbs each.

We must say that these pizza bites will make it possible for us both to satisfy our pizza craving. They were so good we didn't miss the bread AT ALL because the baked mozzarella really took on the role of "dough" in these pizza bites. The second time David made them I, Renee, gorged on them and ate 5 in one sitting. That was way to much, but I just could not stop eating them. I was full, but that didn't stop me. Needless to say you should eat these in moderation with a healthy well balanced keto diet.

INGREDIENTS

3 cups mozzarella cheese, shredded
1 cup sharp cheddar cheese, shredded
Pepperonis (36 small pepperoni slices)
2 tbsp tomato paste
4 tbsp parmesan cheese, shredded
2 tbsp Olive oil

Seasoning to taste, we used pepper, garlic powder, chives, and onion powder.
The first time David made them he added salt, but they turned out to be a little to salty. The next few times he made them he didn't add any salt and they were perfect because the pepperonis added their own amount of salt. If you decide to add salt, add it sparingly until you determine how much you need.

Optional toppings:
meat choices, Olives, mushrooms, jalapenos, green onions etc.


DIRECTIONS:

Turn oven on to 350F
Oil the muffin pan with olive oil
Place the mozzarella cheese in a bowl and season. Mix the seasoning well into the mozzarella cheese.
Fill each muffin slot about 3/4 full with mozzarella (the cheese will be high, but will melt down leaving room at the top).
Next put 1/2 teaspoon full of tomato paste on top of each muffin. The easiest way we found to do this is to drop a scoop on the cheese, then use a wide knife to spread the paste over the top of the cheese. Do not lift up the knife or you will pick up all of the cheese, just spread it and let the knife scrape the side of the muffin pan and all of the paste will stay on the cheese.
Place your toppings on top of the paste (or layer them on top of the meat)
Layer the cheddar cheese
Then layer the meat of choice on top

Place the muffin pan in the oven and bake for 10-20 minutes, times vary depending on how thick you make your pizza bites and your oven. You do not want to overcook them because they will be chewy and/or hard.
Once done, let cool for about 3 minutes, loosen the bites from the pan by scraping the sides with a knife. They can be taken out with the knife and a scraper holding the bottom. They are delicious when served piping hot!! NOTE: You can any additional toppings like parmesan cheese and red pepper flakes while they are still in the muffin pan or while they are on a serving dish.
